Vegan Full Day of Eating

Thanks to an amazing VEGAN YouTuber I am able to write this blog! Derek Simnett or Simnett Nutrition on YouTube is great at what he does. Derek has been a vegan nutritionist for many years and knows his stuff! On June first he blessed us all with a Vegan lifters full day of eating and his perspectives on what's good and what's not! In this blog I am going to be taking you through his full day of eating and list all the tips and tricks he recommends! Now lets get rolling with meal one!


Breakfast


Derek likes to start his day with a glass of warm lemon water. After that he heads to the gym where sometimes he takes a pre-workout before his lift. Breakfast is going to be post workout and take smoothie form. This is one powerful smoothie and great for anytime of the day!


Ingredients

-6 Bananas -a couple “handfuls” of Blueberries -3 dates -1/2 scoop of vegan protein -2 tbsp. Flax seed -1 tbsp. Turmeric -Some Black Pepper to taste -Then Pile on the arugula -1/4 cup of purple cabbage -Lemon slice

Now get ready to blend! This smoothie is full of antioxidants and super alkalizing! Plus its jam packed with vitamins and minerals. If you are looking for a great blender the Vita-Mix is just incredible for chopping down all your regular fruits and vegetables! Yes protein is great for post workout but you can not forget about your vitamins and minerals!


Macros

Calories- 1000 kcal Carbohydrates- 250 grams Protein- 25 grams Fat- 10 grams Omega 3- 3.5 grams

Lunch

Lunch today is going to be a Buckwheat and fruit bowl. When you are getting ready to make the buckwheat make sure you soak it for at least an hour before cooking. This will allow the buckwheat to get soft and speed up the cooking process! Then just go ahead and cook your buckwheat and get everything mixed together! Simnett says that “This is how he stays shredded!”

Ingredients

-1 cup of Buckwheat -1 Apple -7 peach slices (canned) -1 serving of pumpkin seeds -1 serving of sunflower seeds -1 serving of shredded coconut -1 serving of raisins -cinnamon to taste -1 serving of Almond Milk

Macros

Calories- 1000 kcal Carbohydrates- 200 grams Protein- 25 grams Fat- 13 grams Zinc- 45% of RDA

Dinner

ALL WHOLE FOODS, FRUITS, AND VEGETABLES! This is the staple of being a vegan according to Derek! I believe it too! The key to being a vegan and not spending a boat load on trying to match your old hotdogs and hamburgers is to eat mainly fruits, vegetable, and whole grains! This will save you a lot of money and keep you healthy! “We are what we absorb” says Simnett. For dinner today well be having a great big stir-fry. Lentils are going to supply most of our calories and protein. When shopping for beans and lentils that are canned make sure you get organic and salt free. This will make certain that you are getting the best bang for your buck when it comes to health.

Ingredients

-2 cups of mushrooms -1/2 cup of chopped Carrots -1 cup of chopped Cucumber -cilantro to top -1/2 cup of chopped Red Cabbage -1 cup of peas -1 cup of chopped Celery -1 cup of broccoli -1 can of lentils -1/4 cup of chopped tomatoes

Start by heating up a pan and add some water to it. Use water instead of oil because you will get most of your fats from plants anyways. Once that's nice and hot add in the Mushrooms and Celery. Follow up with broccoli, peas and lentils. While that's cooking chop up the Cucumber, Red Cabbage, Carrots, Tomatoes, and Cilantro. Mix all of this together in a bowl and Bon appétit you have a delicious and nutritious meal.

Macros

Calories- 670 Calories Carbohydrates- 130 grams Protein- 43 grams Fat- 3.2 grams Over 100% of All B-Vitamins (except b12) in dinner alone!

So for Derek this was a great big full day of eating with the macros weighing in at 2913 calories, 613 grams of carbohydrates, 98 grams of protein, and 37 grams of fat. This is a 78/11/11 split. For those of you who do not know what that means, it is 78% carbs and an equal 11% for both protein and fat. Simnett is thirty three years old, five feet six inches and weighs one hundred and forty five pounds. Even though his carbohydrates are so much he still maintains his lean shredded look! Derek hopes that this will inspire people make a change and take the steps in to becoming vegan!
